    • The « Cuvée »

Champagne Pol Roger created its Sir Winston Churchill cuvée de prestige as a tribute to Sir Winston Churchill, embodying all the qualities he sought in his champagne: a firm structure, a full-bodied character and maturity. Although its exact blend remains a closely guarded family secret, there is little doubt that it is guided by a principle that would have met with the approval of the man to whom it is dedicated: "My tastes are simple; I am easily satisfied with the very best," as he was fond of saying... This champagne is crafted exclusively from Pinot Noir and Chardonnay Grands Crus and is produced only in the best vintages. The Pinot Noir predominates, providing structure, breadth and robustness, while the Chardonnay adds elegance to the blend. This champagne matured in our cellars for over 10 years before being riddled and disgorged.

Once harvested, the grapes were quickly and gently pressed. Initial settling took place at the pressing facility, followed by a second, cold settling in our vat room. Alcoholic fermentation was then carried out at low temperature in temperature-controlled stainless-steel vats, with each cru kept separate until final blending. As with all our wines, malolactic fermentation was carried out. After tasting, blending and bottling, the second fermentation and ageing took place in the cool depths of our cellars, located 33 metres below ground. There, each bottle underwent traditional manual riddling before disgorgement and dosage.

The wine's bright straw-yellow hue is beautifully set off by its elegant, delicate bubbles. The powerful and generous nose offers up a harmonious bouquet of truffles, sweet spices and patisserie (Black Forest gâteau), complemented by notes of brandy-soaked cherry and subtle hints
of vanilla. In perfect harmony with the nose, the palate is broad and round, revealing a remarkable vinosity with delicate notes of dried fruit and hazelnut. A hint of lemon brightens the finish, whose overtones recall a cigar box. Power, nobility and robustness are majestically expressed, creating an exceptional length on the palate.

    • The « Cuvée »

Since its 175th anniversary, Pol Roger has decided to offer a very limited range of older vintages from its iconic cuvées. After the original disgorgement, these bottles were then returned to the famously deep and cool Pol Roger cellars for additional extended maturation where they have rested undisturbed until their release. Not only do these bottles have a label, cap and collar based on a historic Pol Roger design, they also have been dressed by hand and arrive in an elegant wooden box.
¬The Sir Winston Churchill Cuvée was created in 1975 as a tribute to the "Old Lion", using the qualities he appreciated in champagne : robustness, structure and maturity. Whilst its exact composition is a secret guarded by family members, it is undeniable that it is based on a formula of which its dedicatee would have approved : "My tastes are simple, I am easily satis ed with the best". Made exclusively with grapes from the Grands Crus of Pinot Noir and Chardonnay already in production during the Churchill era, this cuvée is only produced in the very best vintages. Th¬e predominance of Pinot Noir unquestionably ensures structure, fullness and robustness, while Chardonnay lends elegance, finesse and freshness. Produced in limited quantities, this cuvée has matured for 10 years prior to disgorgement.

Malolactic fermentation was carried out as for all our wines. After tasting, blending and bottling, the wine was aged in our cool, 33-metre-deep cellars. All the Vinotheque bottles went through hand riddling (remuage) in the traditional way before disgorgement and dosage.

Beautiful deep gold hue with hints of copper and fine bubbles. On the nose, candied yellow fruits mingle with subtle notes of hazelnut liqueur, fruit jellies and aged cognac. On the palate, the aromas echo those found on the nose. The structure of this very smooth and vinous wine is tight yet sumptuous. Presented in a historic vintage, this Cuvée Sir Winston Churchill has fully benefited from its ageing in the Champagne House's deep cellars, gaining greater depth to become the full-bodied, well-structured wine it is today. Cellar master Damien Cambres describes it as three-dimensional, combining delicacy, power and length.

The colour is a beautiful deep gold, the reflection of a few extra years in the cellar for a champagne dominated by Pinot Noir. The nose is very expressive, with a bewitching intensity of aromas. Fruit jelly mingles with frangipane and almond paste, followed by scents of brioche, toast and vanilla leading on to notes of candied fruit. The palate is at once fresh and full-bodied. Full in the mouth, the wine is rich and complex on the palate, underscored by an alluring vivacity. Aromas of citrus and fruit syrups reveal themselves in a particularly long finish - the conclusion is extremely harmonious.

Golden in colour with a string of fine, elegant bubbles. The nose is initially rather discreet and shows a gentle but lovely evolution. There is vanilla and a hint of patisserie. Aeration releases notes of cocoa, toasted almonds and cashew nuts. On first approach, this wine is superb, both fresh and luxurious. The mid-palate is marked by welcome acidity. The fresh finish has notes of citrus, particularly lemon, and a hint of candied fruit.
